As what was said earlier, you can eat healthy recipes without constantly worrying about the calorie and fat content of the food you are eating. When you cook the right healthy chicken recipes, then you can set your worries aside and instead enjoy your meal. People all over the world seem to be on a health craze these days and because of this everyone is searching for healthy recipes that are also very delicious to maintain their diet and their health as well. If you are on a health binge, you will be happy to know that most healthy foods that are low in fat are very easy to prepare and if cooked correctly can be very delicious as well.
Salads are a great choice when you want to eat healthy foods. The curried chicken salad will definitely make your mouth water which is one of the easy healthy chicken recipes. For this recipe, you will need 1/3 cup of plain non-fat yogurt, 1/4 cup of fat-free mayonnaise, 2 cups of cooked and chopped chicken breasts without the skin, 1/4 cup raisins, 2 teaspoons of curry powder, 1/4 cup of sliced almonds, 1 medium apple chopped into bite size pieces, 2 chopped celery stalks, and 1 tablespoon of chopped cilantro. To prepare, mix the curry powder, mayonnaise and yogurt completely in a small bowl. In a larger bowl, combine the raisins, chicken, almonds, celery and apple. Add the dressing that you have prepared earlier and mix it well. You can use the cilantro as garnish or you can choose other garnishes of your choice. This chicken recipe can be used as a filling for bread or you can eat it with spinach or green salad leaves, depending on your preference.
The next healthy chicken recipe we will discuss is Chicken Pesto Sandwich. This is ideal as a filling lunch. Take ½ cup low-fat mayonnaise, 1/3 cup fat-free plain yoghurt and 1/3 cup of Buitoni pesto. Whisk them all together in a bowl. Add salt and pepper to taste. Add to it roasted and cubed skinless, boneless chicken breasts. Next add diced celery. Mix them well and keep aside. Take 1 pound focaccia bread, cut it into two halves horizontally and then slice it accordingly. Take the salad mixture and place 1 tablespoon on one slice of bread. Top it up with some bell peppers and Romaine lettuce. Place the second slice to cover the sandwich. A healthy and sumptuous lunch is ready.
